When starting your day, it is important to start it the right way. That is why I usually skip the breakfast and fast for 16 hours and eat in an 8-hour window. This is called intermittent fasting. It has numerous health benefits such as managing blood sugar, improve cognitive function and boost growth hormones, among others. This way of eating is ideal for me as it can help me workout more efficiently and have plenty of energy throughout the day. To break my fast, I usually prepare one of the below four recipes. These recipes take a couple of minutes or less and taste so good and are very healthy. After that, I would have my regular plant-based lunch.
1- Bananas and almond/peanut butter: This replenishes the low energy after a long time of fasting and tastes so good. All you need is a couple of sliced bananas topped with your favorite nut butter such as almond or peanut butter. For added nutrition, sprinkle a spoonful of hemp seeds.
2- Beet cleansing juice: This juice is simple to make as all you need is 1 beet, 1 apple and 3 carrots. Put them in your juicer and drink immediately. The earthy flavor of beet is complemented with the sweetness of the apple and carrots. Yum… perfect combination.
3- Nice Cream: is a healthier version of ice-cream and requires two or three ingredients with no sugar. Since it is mostly made with fruits, I like to break my fast with it. All you need is any fruit that you like, cut it in slices and freeze. Then in a powerful blender such as a Vitamix or Blendtec, add your frozen fruits topped with superfoods such as camu camu, maqui berries, chia seeds, and so on. I like to make chocolate banana ice cream. All you need is a few slices of frozen banana, 1 tablespoon of raw cacao powder, 1 tablespoon of raw honey or maple syrup, a dash of coconut milk and voila, a very delicious ice cream. It is best to consume it right away and not to freeze it again. You can top it with shredded coconut flakes, nuts or berries of your choice.
4-Chaga latte power drink: Chaga is known as the “King of mushrooms”. In a previous article “Two Tonic Elixirs to Add to your Daily Routine”, we have talked more about it. It can help boost the immune system, relieve neuropathic pain, support digestive health, normalize blood pressure and cholesterol levels and protect DNA from damage. To prepare it, you need 2 tablespoons of chaga powder, cardamom pods, cinnamon sticks, ginger, clove, and other spices or herbs of your choice. Add them to a quart of water in a slow cooker and cook at low setting for 8 hours. Allow it to cool down for 8 more hours. Then, strain the liquid in a blender; add 1 cup of coconut milk or other type of milk, 1 teaspoon of vanilla flavoring, raw honey or maple syrup to taste and 2 tablespoons raw cacao powder. Blend on high and store in fridge for up to one week. This drink is very satisfying and can be even considered as a meal replacement.
